1. Backup and restore iPhone 12 Pro
That's right, you will want to back up your old iPhone once you have the newest iPhone 12 Pro, so the backup is always up-to-date. You can back up via iCloud, in iTunes, or in the Finder.
For Mac backups (macOS Catalina): Connect your old iPhone to your Mac, open a new Finder window, and select your iPhone in the left column in the Locations section. You'll see a window that looks like the iPhone management window that used to be in iTunes. In the Backup section, select, Back up all data on your iPhone to this Mac. Checking Encryption for local backups is a good idea, so your account passwords and Health data are backed up too-just choose a password you won't forget. Click the button to Back up now.
On macOS Catalina, you can access your iPhone through the Finder.
When the backup is complete, connect your new iPhone 12 Pro, then tell your Mac that you want to restore from the backup you just made. Later, you can switch back to iCloud backup if you wish, in Settings > i Cloud > Backup. But it never hurts to run a backup on your own Mac once in a while.
For Mac backups (macOS Mojave or earlier): The backup process is similar to the one described above for Catalina, but instead, you use the iTunes app. After you've backed up your old iPhone 12 Pro Max, connect the new one. iTunes will take you through the setup steps iPhone 12.
